I have made this lasagna at least once in the past. Last time I made it with turkey but I have a vegetarian now (2022) and I tried it with 1/2 beyond beef and 1/2 beyond beef sausage and it turned out great. I like the idea of trying it with just veggies and maybe using meaty mushrooms for my next attempt. ? I made an extra one to freeze.

I am a stickler for al dente pasta; anything else would be just too much a horror for me to bear. For this lasagna I use minced beef --but minced pork is also very good-- and cremita cheese, a Dominican version of ricotta, only drier. I mixed the cremita with shredded mozzarella, and the lasagna is topped with parmesan.

1. Preheat oven to 350.2. In a pan, saute garlic in Vegetable oil on medium heat for 2-3 minutes. Stir in basil, salt, a little pepper, and tomato sauce. Simmer for 10 minutes. Turn down to low and continue to simmer.3. In another pan, brown your beef and pork. Add browned meat to your sauce and continue to simmer.4. In a bowl, combine Parmesan cheese, cottage cheese and sour cream. Mix well. Set aside.5. In a 9×13 pan, spread 1 cup of your sauce on the bottom. Layer with lasagna noodles and spread another cup of sauce on top of the noodles.6. Add a layer of sliced mozzarella cheese and then half the sour cream mixture.7. Then add another layer of noodles, followed by a cup of sauce, another layer of sliced mozzarella and the rest of the sour cream mixture.8. Then add one more layer of noodles and the last of the sauce.9. Add Parmesan cheese to the top, cover with foil and bake for 25-30 minutes (taking foil off for the last 5 minutes of cooking).
This was a keeper. The only changes I made were to sub 1 lb ground turkey and 1 lb. italian sausage for the beef, and to add 1/2 tsp nutmeg to the bechamel. My husband hates ricotta cheese so I never make lasagna. He LOVED this.
The consistency of the meat sauce and white sauce is very important. I love when my lasagna is scoop-able, which means it is still saucy, you can also cut neat slices but then that is a bit dry and not as good as the scoop-able texture. so to nail the texture perfectly actually depends on the consistency of the beef sauce and the white sauce.

Amazing!! The homemade sauce is my favorite part. I accidentally bought fire-roasted crushed tomatoes instead of fire-roasted whole tomatoes but it seemed to work well and it was delicious. I also added frozen spinach to the cheese mix and a couple sauteed chopped zucchini as recommended. Very helpful explanations of all the ingredients and steps.
